Nigerian Meat Pie

What You’ll Need

For the Pastry

  • 500 g all-purpose flour
  • 250 g cold butter or margarine
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 egg
  • About 120–150 ml cold water

For the Filling

  • 300 g minced meat
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, diced
  • 1 small onion, chopped
  • 1 tablespoon vegetable oil
  • 1 seasoning cube
  • ½ teaspoon curry powder
  • ½ teaspoon thyme
  • Salt to taste
  • ½ teaspoon black or white pepper
  • 1 tablespoon flour
  • About 150 ml water

For Brushing

  • 1 egg, beaten

Step 1: Prepare the Meat Filling

Start by heating the vegetable oil in a pan over medium heat.

Add the chopped onion and sauté until slightly softened.

Add the minced meat and stir, breaking it apart as it cooks.

Season with curry powder, thyme, pepper, seasoning cube, and salt.

Add the diced potatoes and carrots, then pour in the water.

Cover and allow everything to cook until the vegetables become tender.

Mix the tablespoon of flour with a small amount of water to form a smooth paste. Add this to the filling and stir.

Allow it to cook for a few more minutes until the mixture thickens.

Remove from the heat and allow the filling to cool completely.

Important: Your filling should not be watery. A thick filling is easier to work with and helps prevent the pastry from becoming soggy.

Step 2: Make the Pastry

In a clean bowl, combine the flour, baking powder, salt, and sugar.

Add the cold butter or margarine.

Using your fingertips, rub the butter into the flour until the mixture looks crumbly and resembles breadcrumbs.

Add the egg and mix gently.

Gradually add the cold water, a little at a time, until the dough comes together.

Be careful not to add too much water.

The dough should be soft and workable, but not sticky.

Step 3: Rest the Dough

Form the dough into a ball, cover it, and allow it to rest for about 15–20 minutes.

Resting the dough makes it easier to roll and shape.

While the dough is resting, you can prepare your work surface and baking tray.

Step 4: Roll and Cut the Dough

Lightly flour your work surface.

Take a portion of the dough and roll it out to a medium thickness.

Using a round cutter or a small bowl, cut out circles from the dough.

Try to keep the thickness fairly even so that the meat pies bake evenly.

Step 5: Add the Filling

Place a spoonful of the cooled meat filling in the centre of each pastry circle.

Don’t overfill it.

Fold the pastry over the filling to create a half-moon shape.

Press the edges together firmly.

You can use a fork to press around the edges, creating the classic meat pie pattern while sealing the pastry.

Step 6: Prepare for Baking

Place the meat pies on a lined or lightly greased baking tray.

Beat one egg and brush it lightly over the top of each meat pie.

The egg wash gives the pies that beautiful golden-brown colour as they bake.

Step 7: Bake

Preheat your oven to 180°C (350°F).

Bake the meat pies for approximately 25–35 minutes, or until they become golden brown.

Keep an eye on them toward the end because oven temperatures can vary.

Once they’re beautifully golden, remove them from the oven and allow them to cool slightly before serving.

Keep your butter or margarine cold.
Cold fat helps create a better pastry texture.

Don’t make your filling watery.
A wet filling can make the pastry soggy and difficult to seal.

Don’t overfill your pastry.
Too much filling can cause the pastry to burst while baking.

Don’t overwork the dough.
Mix it just enough to bring it together. Overworking can make the pastry tough.

Preheat your oven.
Putting your meat pies into an oven that hasn’t reached the required temperature can affect the final result.
