How To Make The Best Nigerian Moimoi

We can serve it with a variety of meals like any type of rice, custard, pap and trust me, it can turn an ordinary meal into something incredibly delicious.

From choosing the right ingredients to getting the perfect texture and seasoning, every step matters. Ingredients

This is what i use to make my moimoi;

  • 3 cups of beans
  • 5- 10 pieces of tatashe
  • Pepper
  • Onions
  • 3 seasoning cubes
  • Salt to taste 
  • ½ cup vegetable oil
  • 4 eggs 

Quick note: A lot of people like adding crayfish to their moimoi, but honestly, i don’t like adding crayfish in mine. So I’ll be leaving it out this recipe but if you like it in yours, you can definitely add it.

How To Make Moimoi

Now that we have all our ingredients ready, it’s time to get into the actual preparation. The first thing we need to do is prepare the beans properly before moving on to the other steps.

Prepare the beans

First, pick through the beans and remove any stones, dirt, or beans that look bad. Rinse them properly, then soak it for a while to soften them and make it easier to remove the skin.

After soaking, wash and rub the beans thoroughly between your palms to loosen the skins. You keep rinsing and draining until most of the skins are gone and the beans are clean. Once you’re done, the beans are ready to be blended.

Blend the moimoi mixture

Split the tatashe into two halves and remove the seeds. This is important because the seeds can give your moimoi a bitter and unpleasant taste. Wash the tatashe properly and pluck off the green stems at the top.

Next, add your beans, onions, tatashe and pepper to the blender. Add some water and blend everything together until the mixture is smooth and creamy. Please take your time with this step because the smoother your mixture is, the softer and more enjoyable your moimoi will be.

Season the moimoi mixture

Once your moimoi is smooth and creamy, pour it into a clean bowl.Add the three seasoning cubes, salt to taste and ½ cup of vegetable oil. Mix everything thoroughly until the seasoning and oil are well combined with the mixture

At this point, you can taste a little of the mixture to check if the seasoning is enough. Remember, it’s easier to add a little more salt than to end up with overly salty moimoi, so add gradually.

Prepare the eggs 

While your moimoi is resting, boil the eggs until they are properly cooked. Once they are done, allow them to cool, peel off the shells and set them aside. You can leave the eggs whole or cut them in halves; I prefer mine halved because it makes it easier to distribute them among the moimoi portions and i get a nice piece of egg in every serving

Fill and steam the moimoi

Give the moimoi mixture one final stir before pouring it into your moimoi containers or heat-safe nylon bags. Fill each one, leaving a little space at the top then place a halved boiled egg inside. Tie the nylon securely or cover your containers properly.

Arrange them carefully in your pot, add enough water to steam the moimoi without letting the water cover the portions and cover the pots. Allow to steam until moimoi is firm and properly cooked. To check if it’s ready, insert a toothpick or skewer into the center. If it comes out clean, your moimoi is done.

What to serve with moimoi

Moimoi is one of those dishes that goes well with so many things like pap, jollof rice, and fried rice etc. You can enjoy it on its own but personally I enjoy my moimoi while it is still hot, with a cold Pepsi on the side. There’s just something about that combos that hit home.
